Quick Chicken with Veggies and Cashews

This is my go-to quick meal during the week when I do not have time. It is delicious and packed with nutrients. Remember you can make this with any veggies you like.

Ingredients:

1 chicken breast
2 sticks of celery
½ aubergine
1 yellow bell pepper
1 green bell pepper
1 zucchini
1 carrot
1 tbsp of olive oil
Pinch of salt
Handful of cashews

Method:

Place the olive oil in a pan, chop the chicken into pieces and fry it in the pan for 5-8 minutes. Then chop vegetables and add them to the pan and cook for another 5 minutes. Sprinkle the nuts and cook for another minute. Salt to taste.

Serve with couscous or bulgur.

 

Tomato, Feta and Olive Bake

This just great on its own; no need for side dishes.

Ingredients:

150g of black olives
5 small organic tomatoes
1 tbsp of olive oil
1 block of feta
Pinch of black pepper
Dried basil

Method:

Slice tomatoes into rounds and place them on a ceramic baking tray. Sprinkle the olives and crumble the feta on top. Season with pepper and basil and drizzle olive oil on top.

Bake for 25 minutes or until golden brown at 180℃.
